Herdwick Hogget and Mutton
The Herdwick breed grows slowly, and so mature at an age of between 18 months for the rams (hoggs), and 20 months for the ewes (gimmers or mutton over 24 months).

We can provide you with half a sheep (or more), which equates to approximately 10kg of meat (which would fit in about 1.5 draws of a normal freezer). It can be butchered as you require, but we recommend leg and shoulder, thick chops and cutlets, and belly. These are all best cooked slowly, perhaps having been smeared with a marinade, or spices for an African or Caribbean style, or just as a beautiful roast; or taken off the bone to make the most delicious rich stew you can imagine!
We provide the meat to order, and so it may take 2-3 weeks to arrive with you having been hung for at least a week and then butchered to your preference.

We take our sheep to a reputable small local abattoir, and use Tim Potter Family Butchers in Wellington, a well known and conscientious local butcher. Having put so much effort into making sure they have a good life we feel very strongly about the end. And, because there are only three of us involved, the costs are kept low so that we can keep this premium product at a good price for you!

Herdwick Breeding Ewes and Rams
If you are thinking of breeding from Herdwick sheep then please contact us as we would love to see them go to new homes for breeding. We would also consider letting you borrow one of the shearling rams for breeding. Although, of course, our flock is relatively 'young' when compared to the generations of breeding in their native area, we have been careful to invest in good breeding stock from several of the well known Cumbrian bloodlines. Herdwicks are robust, intelligent, make a good weight, and are good natured.
